1 cup flour
1 cup water
4 beaten eggs

Mix together to make a pancake-type batter. Don't over-mix.

Spoon some batter directly onto the simmering plate (or a griddle if you don't have an Aga) and cook as you would a pancake, flipping over to cook both sides. They cook quickly. They'll look like a pale yellow pancake.

I spread each pancake with ricotta cheese and then sprinkle some grated mozzarella cheese. Then I roll it up and put it seam-side down in a shallow casserole dish. I spoon sauce over and then sprinkle more grated mozzarella. Bake in the 350-ish range until heated through and the cheese is melted. The temp of the oven isn't crucial, so you can use whichever oven you have room in, even the roasting oven (altho I probably wouldn't put it near the top).

I personally use my spaghetti sauce as the topping, but you can use any sauce you like. This is a very Americanized version of manicotti, but I've never had anyone complain about it!
