|I'll find out which cookbook this is in and post later, but for now, here is a recipe I make by request often.
Honey Bun Cake
Preheat oven to 350 degrees; 325 degrees for a glass pan
1 yellow cake mix (plain)
1 cup sour cream
3/4 cup vegetable oil, such as canola, corn, safflower, etc.
4 large eggs
Mix all ingredients and pour into greased 9 x 13 pan. (I use Pam)
1/3 cup honey
1/3 cup light brown sugar, packed
1 tablespoon ground cinnamon
1/2 cup finely chopped pecans (optional)
Mix brown sugar and cinnamon together in a small bowl, the sprinkle over the batter. Drizzle with honey. Sprinkle with nuts.
With a spatula or knife, swirl until it looks like a honey bun. (optional, I usually make 9 swirls)
Bake 38 to 40 minutes, or till cake tests done
2 cups confectioners' sugar, sifted
1/3 cup of milk
1 tsp pure vanilla extract
In a small bowl, whisk together the confectioner's sugar, milk and vanilla until smooth.
Ice cake while it is still fairly hot.
Is good served warm.
I don't use 2 cups of confectioners' sugar...half of that recipe is enough. less sugar too.
I have seen other recipes where you pour half the batter, sprinkle half of filling mixture, repeat steps, but this is much easier and tastes equally as great.
My next house will have no kitchen - just vending machines and a large trash can.
