Unless you get a San Francisco sourdough starter from someone, your sourdough won't taste like sourdough made in San Francisco. The reason is, starters pick up their unique taste from the yeast organisms indiginous to the region, free in the air. I'm posting from my phone right now, but will come back later with some links for you regarding preferments/starters. :)
