Your bread might have been over-baked. Do you use a thermometer to see when it's done, or do you go by the thump test? Did you pre-heat your stone in the oven?
Funny you should mention the silicon pans. I'd been wanting to try one, and Thursday a quick trip to Goodwill resulted in my bringing home a Calphalon silicone bread pan for only $4. Woot! I can't wait to try it out! I have five loaves of wheat bread in the freezer from a day when I felt like making a couple new recipes, though, so it may be a while. Maybe I should give my wheat bread to friends and family so I have an excuse to make more. LOL
