Characteristics of Plant
Rooster Spur is a heirloom seed that is rare to sometimes hard to find. It was originally used by Virgil T. Ainswoth of Laurel, Ms. to make his famous rooster sausage.

While the pods may only be 1/2" -1" long they are very flavorful and pack a punch. They range from 20,000 to 30,000 on the Scoville scale.

Pods grow upright on the plant and change from green to orange or red. They may be eaten or used in all stages of color.

This is a pepper that is easily dried or ground up to make chili powder with. Adds heat and flavor to sausage not only made from pork, but also from venison.

The plant can be grown in the ground, used as an accent plant in a flower bed or grown in a container.
