|Ella, the Penstemon stalk will have seed pods that are shaped like upside-down teardrops. The seed will be dark brown to black and is usually irregularly shaped (they remind me of really burnt toast crumbs), though some small seeded varieties can appear roundish. Oddly, many species' seed have the faint odor of poo about them, but I know that won't help you.
The Veronica stalk will basically look like a dried flower stalk, because the seed pods are really tiny. The seeds are very tiny (but bigger than Digitalis,) tan to brown and shaped like little ovals.
Regarding the "Aster," I agree with Arlene that it is Stokesia which is informally called "Stoke's Aster."
