Veggie Tian 1 Onion 3 yellow squash/zucchini 2 medium tomato 5-6 small red potatoes Lots of Basil leaves Olive oil Salt and pepper Parmesan cheese Slice all veggies very thinly. If tomatoes are large, quarter them. Cut large basil leaves in half. Use a large rectangular Pyrex dish. Coat the bottom with olive oil. Sauté onion and spread on bottom. Starting on the left, layer the tian in this order: squash, tomato, squash, potato, basil. Repeat again and again until row is done. Stand up the veggies as you pack them in. Salt and pepper the row and start again until dish is full. Drizzle olive oil over veggies and season again with salt and pepper. (can also make it in round dish and work in a spiral pattern.) Cover with foil and bake in 350 oven for 30 minutes. Uncover and add 2/3 cup parmesan to top. Return to oven and bake 15 -20 minutes more |
