Spaghetti squash recipe
Cook squash in oven or microwave until soft and scoop out with fork, drizzle with olive oil and touch of salt.

Topping: sauteed garlic, olive oil, caramelized onion, tomatoes, zucchini, frozen green Lima beans or butterbeans peppers or any veggies you want to use, including eggplant, but always use the frozen limas/butterbeans or whatever fresh beans you have. Fresh herbs like oregano and basil.

This is better than just using spaghetti sauce out of the jar. Everyone but Joseph should try it. I don't think I've ever not liked a vegetable as long as it wasn't overcooked..it's all in the preparation.
