|V-8 Chicken Vegetable Soup
1 1/2 cups water
1 package 10 ounces frozen broccoli spears
3/4 cup chopped onion
1 garlic clove, minced (you can use garlic powder)
3/4 pound boneless skinless chicken breast, cut into 1 inch chunks (I season this with italian seasoning for additional flavor)
1/2 teaspoon salt
1/4 teaspoon pepper
1 large can V-8 juice....walmart brand is cheaper...I also get the low sodium.
1 can (15 1/2 ounces) great northern beans rinsed and drained
1 can (15 ounces) black beans , rinsed and drained
1 can (11 ounces) whole kernel corn, drained
1 tablespoon ketchup
1 teaspoon brown sugar
In a soup kettle, combine water, broccoli, onion and garlic. Bring to a boil; boil for 4 - 6 minutes. Smash these ingredients with a masher until in chunks.
Over medium heat, cook chicken until done...about 6 minutes. Sprinkle with the salt and pepper. Add to broccoli mixture.
Stir in the V-8 juice, beans, corn, ketchup and brown sugar; bring to a boil. Reduce heat; cover and simmer for 10 - 15 minutes stirring occasionally.
This could also be placed in a crock-pot and put on low. Makes enough for approximately 12 servings
