What the Hell is up with this Chicken?

Here's what a "Rubber Chicken" looks like after it's cooked!

I bought this beautiful plump, 5lb chicken at our local Grocery store the other day (fresh, never frozen, minimally processed and in the Greenwise section). Stuffed it and roasted it and I thought it looked beautiful when it came out of the oven. 

Well, I could have used a chain-saw to cut it! The squeaky noise it made when trying to cut through the leg, sounded like I was trying to cut through a rubber tire! Obviously this one would have been much better suited for a soup-pot! HA!
