La Cucina di Kat: Lobster Mashed Potatoes

I borrowed this recipe from my best friend Carolyn, who makes them just devine! These are so decadent but delicious and they'll leave you craving for more! Obviously from the cost of the ingredients involved, it's not exactly something you eat everyday...but for a very special occasion, it's just an incredible combination. If you have a friend in the Lobster business or there's a big's a good time to try these!

For 1lb of Lobster meat I used 1 whole lobster and 2 medium/1 small tail - This served 6 with a bit left over for my breakfast! Yum!


6 medium to large potatoes, peeled and cut into chunks 
1 pound lobster meat
1 clove garlic minced 
1/2 cup butter (1 stick)
2 tablespoons sour cream
Salt and freshly ground pepper 
3 ounces soft herbed cheese (Boursin Garlic/Herb is great!) 
1 tablespoon finely chopped Fresh Tarragon
1/4 cup chopped fresh chives 

Cook your lobster or have it pre-steamed at the place you purchased it. 

Boil the potatoes in salted water until the potatoes are tender. While the potatoes are cooking, remove the Lobster from the shells and cut into 1" chunks and set aside. 

Drain the potatoes well. Add the butter, sour cream and minced garlic and mash the potatoes until they're creamy and smooth. Add salt and pepper to taste. Keep warm if you're not serving them immediately. 

Just before serving, fold the lobster meat into the potatoes and blend. Gently mix in the Tarragon and Boursin cheese. Spoon into a serving bowl or individually and garnish with the Chives! These are unbelievable!
