|I'm not a huge sauce person but just a little drizzle of this Cheese sauce goes amazing with a Filet. It's so rich, you really don't need much. Easy too!
Melt a little butter and put about a clove of minced garlic into it. Rub this all over your Filets. Salt and Pepper them and let them sit until you're ready to grill or broil them.
For the Cheese sauce:
2 cups of Heavy Cream
3 oz's of good quality Gorganzola cheese crumbled
2 tablespoons Parmesan
a pinch of nutmeg
Simmer your Heavy cream for about 45 minutes until it's reduced to just over half. Add in the Gorgonzola, Parmesan and nutmeg, stir it in until it's all blended. If it's too thick, add a little more cream. Simmer for a couple more minutes. You can turn this off until you're ready to use it and just give it a quick heating when the steaks are ready.
After Grilling or Broiling your steaks to desired doneness...just drizzle it with the cheese sauce and add a few bacon crumbles on top!
I served this also with Roasted Asparagus wrapped in bacon.
Shake your asparagus around in a little olive oil to coat. Gather them into bunches and wrap a 1/2 piece (cut longways) of bacon to keep them together. Secure with a toothpick if needed. Sprinkle with salt and pepper. Bake this on a sheet or baking dish for about 20 minutes at 400.
