|Very comforting Meatloaf
I love Meatloaf every so often. I made this yesterday as I was sitting fooling around on Cubits all day and needed to make something easy but good for dinner! Hehe
I happened to have some ground Veal left over from Lasagna I had made the day before, but I usually used Pork and Beef. Basically, I use 2 lbs of meat to fill a regular loaf pan. The veal changes the flavor a bit…but not that much. Sometimes I use bread crumbs for Meatloaf, but really do prefer the bread slices.
2 lbs of Ground Meat – Either 1 lb Lean Ground Beef and 1 lb fresh ground Pork
Or in this case – 1 lb Beef/1/2 lb Pork/1/2 lb Veal
1 medium onion diced
1 stalk of Celery chopped
2 Garlic Cloves minced
1 teaspoon of Worchestershire Sauce
5 slices of bread (older bread is better)
½ teaspoon Oregano
½ teaspoon Rosemary
a few sprigs of fresh Parsley chopped
1 teaspoon salt
½ teaspoon pepper
Canned Diced tomatoes or tomato sauce
In a large mixing bowl – add your meat, eggs, diced onion, chopped celery, minced garlic and Worchestershire sauce, Oregano, Rosemary, Salt and Pepper.
Moisten your bread slices with water and squeeze out the excess. Flake the bread into the bowl with the other ingredients. With a masher or your hands, mix everything together thoroughly.
Pack it into a loaf pan and press it down to ensure there are no air pockets on the sides. Cover the top with a layer of the diced tomatoes or tomato sauce.
Bake in a 375 degree oven uncovered for about 1 ½ hours. I just like a nice baked potato on the side and really love the leftovers for meatloaf sandwiches!
