This is probably one of my favorite ways to prepare Baby Back Ribs. Sounds too simple to be really good, but it's just plain salt and pepper, fried in a garlic infused oil! I usually add a touch of fresh rosemary but it's not necessary. I think I first started eating them this way after I had a couple left over from browning them for a pot of tomato sauce.

Put a couple tablespoons of Olive oil in a large skillet. Add a few cloves of garlic and let them saute and brown. Remove the garlic.

Cut the ribs individually and place them into a pan on one side. Then just give them all a quarter turn (fleshy bone up/on it's side/bone down then on it’s other side) and cook them for about 5 minutes on each side adding salt and pepper to each turn. The salt just crisps everything up and they are so delicious. I drain them on paper towels to get any excess grease out and it’s a feast! You can also put them into a roasting pan and do them in the oven.
