One year I was searching for a sweet potato recipe that I could use as accompaniment to our Thanksgiving meal, that did not try to compete with the dessert in its sugar content. Now I frequently make this dish!

5 pounds sweet potatoes
1/2 cup unsalted butter, softened
1/2 teaspoon freshly gound cardamom (I use a mortar and pestle for this)
salt and pepper to taste
a few tbsps of vegetable oil for frying
3/4 pound thinly sliced shallots

Preheat oven to 400 degrees F (200 degrees C).
Prick sweet potatoes with a fork. Bake for 1 hour or until tender; reduce oven temperature to 250 degrees F (120 degrees C).
Scoop potato flesh out of skins and place into a mixing bowl. Slowly beat in the butter and cardamom. Whip until potatoes are smooth and fluffy; season with salt and white pepper. Keep warm in oven.
In a skillet, heat the oil until shimmering. Add 1/2 of the shallots to oil and fry until crisp. Transfer the shallots, using a slotted spoon, to a paper towel; season with salt. Repeat the process until all the shallots are fried. Garnish top of potatoes with shallots.

Of course. I never use that much... Just add to taste, I would say.

mmm! I love this recipe..cardamom and sweet potatoes just taste great together!
It's a really easy recipe to riff on, too, because it's so simple: you can add the juice of an orange and some cranberries to sweeten it up. (I top with toasted pecans instead of shallots then)
Or, if you are grilling out and want a more tropical twist, slice the peeled potatoes up with a dab of butter, the juice of a lime, 2 mangoes and about 3-4 pods of freshly ground cardamom and put in foil pockets on the grill. MMmmm.
Really, thanks to this recipe, cardamom has kinda become my go-to spice for sweet potatoes. Smiling
