HAHAHA Gotch!!! Ain't no such thing...right? Weeeeeelllll, kinda, sorta there is:

I hang a double layer of cheesecloth with plain yogurt inside of it...and I leave it hanging for, OH, 8-10 hours over a container. What 'leaks' out of the cheesecloth sack into the bowl is the whey ... full of the vitemins and minerals of milk. What's left are the milk solids!!! = cheese. (figuring out how to get the yogurt in the cheesecloth and hang it over the bowl is part of the program....have fun!)

If you don't mind the added fat, Greek Yogurt makes the 'do die for' best!!!

With the 'cheese' you have a blank sheet and can compose your own symphony....

+garlic, italian herbs
+garlic, basil and tomato slice or half or sundried tomato in olive oil
+garlic, toasted cumin on tortilla chips
+garlic, +++++++

I use these spreads on crackers, vegetables, on a baked potato....endless....

The whey I use to soak oatmeal in the winter for porridge... I add it to fruit smoothies, to soups....but it is usually all used up fast!!! I have been known to question if it has been too long in the fridge and given it to the dog with NO ill effects... Whistling

Sounds really good Carol. It's a spreadable cheese right? Any similarity to fresh mozzarella in texture?

Haven't had fresh mozzarella in so long, I have forgotten. It's like a soft goats cheese in TEXTURE only....without seasonings it really has no flavor except for that of mild yogurt.

Sometimes I spoon it in vegetables with seasonings and it makes it a different dish...sometimes mash it up with feta or goats cheese to stretch the fat/calories.
