Salads and Dressings forum: Delicious Hot Bacon Dressing

This is really very tasty and quite pungent! I used it here over grilled romaine but it is also really good over spinach or other greens as a wilted salad!


8 slices of thick bacon - diced
1/2 onion - diced
2 cloves of garlic chopped fine
1/2 cup of cider vinegar
1 cup of water
1/2 cup of sugar
2 tablespoons of dijon mustard
1 tablespoon cornstarch
salt and pepper to taste

In a skillet, cook the bacon until crisp. Remove and keep it aside retaining about 1 tablespoon of the bacon drippings. Add the onion and garlic to the drippings and saute until the onion is transparent and soft. Turn off the heat and add the vinegar, water, sugar and dijon mustard. Mix the cornstarch with a little cold water (about a tablespoon) and add to the sauce - mixing in well. Return to the heat and bring to a low boil, constantly stirring until thickened. Add salt and pepper to taste. Serve it immediately over your greens or make it in advance and give it a quick reheat. This can also be made in advance and stored in the refrigerator.

I'd say this is my favorite dressing ever. Thanks so much for sharing the recipe. Everything is better with bacon! Can't wait to try on a spinach salad.

Susan - It is really good. You can add some diced red peppers in also - Make's it pretty! Just didn't have any on hand.
