Classic Egg Salad

Egg Salad is one of my favorites. Yes it's an easy recipe but I'm posting it here because you just never know - maybe there's somebody out there that doesn't know how to make it. I like mine fairly dry and with just enough Mayonnaise to hold it together. The addition of mustard gives it just a little added taste and it's all personal preference how chunky you want to chop the eggs.


8 Large Hard boiled Eggs see some egg peeling tips
1/2 cup of Mayonnaise (add more if you like it creamier)
1/2 small Onion chopped fine
1 stalk of Celery chopped
1 Tablespoon of Dijon mustard
Salt to taste
Pepper to taste

Peel and chop the eggs to desired consistency. Add in the Mayonnaise,onions, celery and mustard. Mix together well. Season with salt to taste and add pepper.

I love the mustard addition! I add a wee wee bit of Dijon to mine.

For extra tanginess try making it using pickled eggs!!
