Oh Hetty, my sis gave me the simplest key lime pie recipe that is soooo good. She learned it while working in a bakery in Orlando.

1 graham cracker crust (8")
1 can sweetened condensed milk
juice of 2-4 key limes + zest of 1 key lime
1 egg yolk
sweetened whipped cream

Blend together sweetened condensed milk, lime juice and zest, and egg yolk, and pour into crust. I added juice and zest to the milk and kept tasting till it had the right sweet/tangy balance, then added the yolk. Bake at 350F for 20 minutes and cool. Chill for a few hours and top with whipped cream.

I've experimented using a larger crust and doubling the filling and it worked well. I've also played with the recipe using lemon, tangerine, orange, and a combination of citrus fruits, and they were all really good. The tangerine and orange required more zest and juice to up the flavor, and I added some lemon juice to give it the tang that I like, but the result tasted just like a cream sickle!

My sis said the filling will set up fine without baking, but she learned the recipe working in a bakery where they couldn't serve uncooked eggs. I've always baked them- I kinda felt like the filling would be more sure to set up if heated.

Yes, that is the recipe that can be found on every bottle of Key Lime juice that is sold here Smiling Alternatives are using the egg whites to make a meringue on top.
I was hoping someone would have gotten creative with it and made some alterations.
I want to make a 'Rangpur Lime Pie' since a friend has a tree with Rangpur Limes - I am always surprised they are not more popular, they have a unique and very aromatic flavor.
