It's all about choices.
This is a take on Ratatouille...a French veggie dish good hot or cold...and I happen to like cumin...so I put it all together::::

My quantity makes enough for 2 healthy eaters two nights....

About 2 feet worth of long skinning Japanese Eggplant...cut into 1" chunks (or less). No need to salt these eggplants .....
A pepper or two
Fresh tomatoes cut into small pieces or small can of diced tomatoes drained. Rotel Tomatoes would taste GREAT!
Onion
Garlic (lots)
Olive Oil
Cumin
Hot Peppers

I cook the eggplant in a splash of oil in a frying pan or a wok. After about two turns in the hot oil I splash the eggplant with water or chicken broth and cover. After about 5 mins, I uncover, stir and let the water cook away and the eggplant will brown without using gobs of oil. SET ASIDE.

a bit more oil in the pan and brown onion, garlic, peppers and cumin seeds (about a good Tbsp), then I add the eggplant back in the pan with the tomatoes and let them all cook together until peppers are done. Not very long at all. I add a pinch of salt to taste...

We like this with roasts...or a simply cooked meat.

PS DH calls everything he likes "Whizbang"...

Years ago at a 'Gourmet Food Show' I bought a bottle of 'Cowboy Caviar' which turned out to be Ratatouille with very small chunks of veggies. We loved it on sandwiches and as a dip for raw veggies. I think this would work the same way.... Big Grin

What kind of peppers do you use in your dish? Mmmm, bet cherry tomatoes would taste really good in that, too.

I've used both red and green...equally good. I don't use more than one smallish as the pepper tends to overwhelm everything!!! Yes..the cherry tomatos would be great: if/when I do a roast I also roast roma tomatoes (cut in half with olive oil and garlic on them...and bake them for about 3 hours...they dehydrate and caramelize) and then freeze them about 8 halves at a time in ziplocks. They are great in this...or in anything wanting a good tomato flavor....

Oh, geez, those caramelized tomatoes sound good! Hmmm, but I don't roast beef in the oven, I always do it in the crock pot.....sooooo, I have this great idea! You can just send me a couple of those frozen ziplocks! Or better still, deliver them in person! See? I have good ideas, too! Big Grin
