Regional Recipes and Foods forum: Stuffed Cabbage?

|I was given some smoked pork - tons of it - and I want to cook it down, take the fat off and use it, perhaps in some Savoy Cabbage leaves from my garden. The smoke is kinda sweet and I don't want to use gobs of rice or potatoes. Anyone have any suggestions? We did make some Borscht with it and it was great but a bit sweet.....
