Tomato Salad

Just a nice little refreshing side dish. - Simple and fresh and goes great with a Steak! Great when those tomatoes are ripening on the vines!

2 Large Tomatoes chopped in 1 inch pieces
1/4 cup Olive Oil
1/4 cup Red Wine Vinegar
1 sprig of fresh Basil chopped
1 large Garlic Clove chopped
Salt and Pepper

Combine the Olive Oil/Vinegar, Garlic and Salt andPepper to taste. Pour over the tomatoes and toss. Garnish with the Basil, serve,
and Enjoy!

Oh yeah...there is nothing like a fresh tomato out of the garden. Last year, I grew them in containers and just waited, and waited, and waited...and waited...

Finally, I got that hot ripe tomato in my hand and brought a salt shaker outside...And ceremoniously ate the first one like I've never eaten a tomato before! Big Grin

It was the best!
