1/2 cup sugar
1/2 cup packed brown sugar
3 tablespoons all purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
6 cups thinly sliced peeled tart apples (6-7 cups)
1 tablespoon lemon juice
pastry for double-crust pie
1 tablespoon butter
1 large egg, lightly beaten
coarse sugar for sprinkling

1. In a small bowl, combine the sugars, flour and spices; set aside. In a large bowl, toss apples with lemon juice. Add sugar mixture; toss to coat.

2. Line a 9-inch pie plate with bottom crust; trim pastry even with edge. Brush bottom and up the sides of the crust with the beaten egg. Fill with apple mixture; dot with butter.

3. Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in pastry. Brush top crust with beaten egg and sprinkle with coarse sugar.

4. Bake at 375°F for 45-50 minutes, or until crust is golden brown and filling is bubbly. (Cover edges of crust with foil if needed to prevent over-browning.) Cool pie on a wire rack

If apples are frozen, do not thaw before using.
