4 TBSP red bell pepper, chopped
2 TBSP jalapeno pepper, chopped
2 TBSP onion, chopped
1 c mayonnaise (or 1/2 c mayonnaise and 1/2 c sour cream)
1 TBSP vinegar from jalapeno peppers (or plain vinegar)
1/4 tsp black pepper
1/4 tsp chiii powder
1/4 tsp garlic powder

Blend peppers and onion in a blender or food processor. Mix well with remaining ingredients and refrigerate.

1 c tomato sauce
3 TBSP water
1 TBSP vinegar
1 1/2 tsp chili powder
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp paprika
1/4 tsp sugar
1/4 tsp cayenne pepper
1/4 tsp cumin

Mix all ingredients well in a sauce pan and simmer for 15 min. (Use within a few days or freeze since it does not contain preservatives.)

Red Enchilada Sauce 2

1 TBSP olive oil
2 garlic cloves, minced or 1/2 to 1 tsp garlic powder
1 tsp onion, minced
1/2 tsp oregano
2 1/2 tsp chili powder
1/2 tsp dried basil
1/8 tsp ground black pepper
1/8 tsp salt
1/8 tsp ground cumin
1 tsp dried parsley
1/4 c salsa
6 oz tomato sauce
1 1/2 c water

Stir fry garlic and onion for 30 sec in large pan over medium heat for 30 sec. Add remaining ingredients. Bring to a boil, reduce the heat, and simmer for 15 min.

Mutha Sauce (barbecue sauce)

1/4 c vegetable oil
1 c minced onion
1/2 c minced green pepper
1 jalapeno pepper, seeded and minced *See NOTE at end.
pinch each of salt and black pepper
2 TBSP minced garlic
28 oz tomato sauce
2 c ketchup
1 c water
3/4 c Worcestershire sauce
1/2 c cider vinegar
1/4 c lemon juice
1/4 c molasses
1/4 c cayenne pepper sauce
1/4 c spicy brown mustard
3/4 c brown sugar, packed
1 TBSP chili powder
2 tsp ground black pepper
1/2 tsp ground allspice
1 TBSP Liquid Smoke (optional)

Saute onions, green peppers, and jalapenos in large saucepan in vegetable oil. Season with salt and pepper and cook until soft and golden. Add the garlic and cook for 1 min. Add remaining ingredients except Liquid Smoke.
Bring to a boil; then lower the heat and simmer for 10 min. Swirl in the Liquid Smoke, if desired, and let the sauce cool.
Pour into a container. Cover and store in refrigerator until ready to use.
6 to 7 cups

*NOTE: If you want hotter barbecue sauce, add additional peppers or hotter peppers.

Red Enchilada Sauce

2 c chicken broth or bouillon
4 TBSP Chili Powder
2 1/2 tsp garlic powder
3/4 tsp salt
dash ground cinnamon
1/2 tsp sugar
5 TBSP cold water
5 TBSP flour

Whisk together in a large sauce pan chicken broth, chili powder, garlic powder, cumin, salt, cinnamon and sugar. Bring to a boil; reduce heat to a low boil and cook for 3 min. Whisk frequently.
In a small bowl, whisk together water and flour until smooth. Return broth mixture to high boil. Very slowly, pour the flour mixture into the boiling sauce and whisk to prevent lumps. Cook 1 min longer and remove from heat.
When the sauce cools, a skin may form on the surface. Peel the skin off and discard it.
yields about 2 1/2 c sauce (20 oz)

Tartar Sauce

3/4 c mayonnaise
2 TBSP onion, diced
1 TBSP dill pickle, chopped
1 TBSP capers (or 1 more TBSP dill pickle, chopped)
1 TBSP parsley, chopped
1 TBSP lemon juice
1/8 tsp Dijon mustard
dash of Tabasco or hot pepper sauce
salt and pepper to taste

Blend all ingredients, except salt and pepper, in blender or food processor. Add salt and pepper to taste. Cover and refrigerate until ready to serve.
about 1 cup

Honey Butter Dipping Sauce

1/2 c minced onion
1 TBSP minced garlic
2 TBSP butter
4 tsp lemon juice
1/2 c butter, melted
1/2 cup honey
dash of salt and pepper
hot sauce, if desired

Saute onion and garlic in 2 TBSP butter until lightly browned. Reduce heat and add remaining ingredients. Stir and cook until sauce is thoroughly heated and thickened a little. Remove from heat. Good for dipping or drizzing over chicken tenders or wings.

Seasoning Mix for Tacos

2 tsp instant minced onion
1 tsp chili powder
1/2 tsp salt
1/2 tsp cornstarch
1/2 tsp red pepper
1/2 tsp garlic powder
1/2 tsp cumin
1/4 tsp oregano

Combine and store in airtight container or jar. Store up to 6 months.

Honey Garlic Marinade for Pork or Chicken

1/4 c lemon juice
1/4 c honey
2 tbsp soy sauce
2 cloves minced garlic

Mix ingredients well and pour over meat and cover. Refrigerate from 8 to 24 hrs, turning occasionally. (I use a plastic ziplock bag.)

Tomatillo Sauce

1 c onion, finely chopped
3 cloves garlic, minced or put through a garlic press
2 TBSP vegetable oil
14 oz can tomatillos, drained, OR 1 1/2 c fresh tomatillos, husks removed, chopped
7 oz can chopped green chiles
1 fresh jalapeño, seeded, stem and veins removed, finely chopped
1/2 tsp sugar
salt to taste
1 TBSP water

Saute onion and garlic in oil until onion is transparent.
Add the tomatillos, chiles, and jalapeno.
Pour entire mixture into blender or food processor and pulse to make a coarse puree.
Return mixture to pan.
Add the sugar and salt, and simmer over low heat for 30 minutes until sauce is thick.
Stores well in refrigerator.
about 2 cups

Chinese Brown Sauce

3/4 c beef broth or bouillion
4 tsp oyster sauce
1 tsp soy sauce
1/2 tsp sugar
1 TBSP cornstarch

Mix ingredients well; then into pan of whatever you have stir-fried. Cook until thickened to desired consistencey.

Chinese White Sauce

1/2 c onion, minced (or 2 TBSP dehydrated onion flakes)
2 tsp ginger, grated (or 1 tsp ground ginger)
2 tsp garlic, minced (or 3/4 tsp garlic powder)
1/2 c white wine
3 c clear vegetable stock
2 TBSP corn starch
1/8 tsp sugar
1 TBSP oil
salt to taste

Mix all ingredients well and pour into pan with whatever you have stir-fried. Cook until sauces thickens and reaches desired consistency.

Pizza Sauce

2 TBSP olive oil
1 TBSP butter
1/2 c onion, chopped
1/4 c celery, chopped
2 garlic cloves, minced
8 oz can tomato sauce
6 oz can tomato paste
2 TBSP grated Parmesan cheese
1 bay leaf
1 tsp dried basil
1 tsp dried oregano
1/2 tsp fennel seeds
1/2 tsp salt
1/2 tsp sugar
1/4 tsp pepper

In large skillet, saute onion, celery and garlic in butter and oil until tender, about 5 min.
Add tomato sauce and tomato paste and stir until smooth.
Add remaining ingredients and simmer uncovered for 30 min.
Remove bay leaf and puree until smooth.

Taco Seasoning #2

4 TBSP chili powder
2 TBSP cumin
1 TBSP paprika
1 TBSP dried onion flakes
2 tsp garlic powder
1 tsp oregano
1 tsp black pepper
1 TBSP corn starch (optional for thickening)

Mix well and store in air tight container. 2 TBSP equals one packet of taco seasoning. Add salt to meat as you are cooking, if desired.
