Sour Cream Pound Cake Ingredients 1/2 c (1 stick) butter, at room temperature 1 1/2 c sugar 1/2 c sour cream 1/4 tsp baking soda 1/8 tsp salt 1 1/2 c flour 3 large eggs, at room temperature 1/2 tsp vanilla extract 1/4 tsp almond extract Instructions In large mixer bowl, cream butter and sugar until flluffy. Mix in sour cream. Sift together baking soda, salt, and flour. Add flour mixture to creamed mixture alternating with eggs, one at a time. Mix in vanilla and almond extracts. Pour into large greased and floured loaf pan. Bake at 350 degrees for 40 to 60 min or until toothpick inserted into center comes out clean. Source: adapted from recipe by Paula Deen |

Quick Carrot Cake Ingredients 1 box carrot cake mix 1/2 c orange juice or water 1/2 c vegetable oil 1 c crushed pineapple in juice, undrained 1 tsp grated orange peel 1 tsp vanilla extract 4 eggs 1/2 c walnuts or pecans, chopped 1/2 c flaked coconut 1/2 c raisins. chopped Instructions In large bowl, beat cake mix, orange juice, oil, pineapple, orange peel, vanilla and eggs on low speed 30 sec. Beat on medium speed 2 min. Stir in nuts, coconut and raisins. Grease and flour two 8" or 9" round cake pans or one 13 X 9" pan. Pour batter into pans. Bake at 325 degrees for 30 to 35 min (round pans) or 37 to 43 min (13 X 9" pan) or until toothpick inserted in center comes out clean. Cool 10 min. Run knife around side of pans to loosen cakes; remove rounds from pans to cooling racks. Cool completely, about 1 hr. Frost with cream cheese frosting or frosting of your choice, if desired. |

Tres Leches (Three Milk) Cake Ingredients 1 yellow cake mix (with pudding) baked as directed in 13 by 9-inch pan For topping mixture: 1 can evaporated milk 1 can sweetened condensed milk 1 pint heavy whipping cream 1/2 cup rum (or to taste) To finish: Whipped cream, to cover cake 5 ounces sweetened coconut (optional) Directions Poke holes in the cake with a fork all over. Pour topping mixture over cake. Let mixture absorb completely in refrigerator. Cover with whipped cream or cool whip and sprinkle sweetened coconut over top of cake. Easy Pineapple Cake Ingredients for cake: 2 c flour 2 c sugar 2 eggs 1 tsp baking soda 1 tsp vanilla pinch salt 20 oz can crushed pineapple in its own juice, undrained for frosting 1/4 c butter 4 oz cream cheese, softened 1/2 tsp vanilla 3/4 c powdered sugar Instructions Mix all of the cake ingredients together in a bowl. Pour into a greased 9â€X13†pan. Bake at 350 degrees for 35 - 40 min or until top is golden brown. For frosting, beat butter, cream cheese and vanilla together until creamy. Gradually mix in powdered sugar. Frost cake with cream cheese frosting while still warm. |

Best Banana Cake Ingredients Cake 1 1/2 c ripe bananas, mashed 2 tsp lemon juice 3 c flour 1 1/2 tsp baking soda 1/4 tsp salt 3/4 c butter, softened 2 1/8 c sugar 3 large eggs 2 tsp vanilla 1 1/2 c buttermilk Frosting (I often make only 1/2 recipe of frosting.) 1/2 c butter, softened 8 oz cream cheese, softened 1 tsp vanilla 3 1/2 c powdered sugar Instructions Preheat oven to 275°. Grease and flour a 9 x 13 pan. In a small bowl, mix mashed banana with lemon juice; set aside. In a medium bowl, mix flour, baking soda and salt; set aside. In a large bowl, cream 3/4 c butter and 2 1/8 c sugar until light and fluffy. Beat in eggs, one at a time, then stir in 2 tsp vanilla. Beat in flour mixture alternately with buttermilk. Stir in banana mixture. Pour batter into prepared pan and bake in preheated oven for 1 hr or until toothpick inserted in center comes out clean. For the frosting, cream butter and cream cheese until smooth. Beat in 1 tsp vanilla. Add powdered sugar and beat on low speed until combined, then on high speed until frosting is smooth. Spread on cooled cake. Store leftover cake in refrigerator because of cream cheese in frosting. |

Pumpkin Crunch Cake Ingredients 1 can (15 oz) pumpkin puree 1 can (12 oz) evaporated milk 4 eggs 1 1/2 c sugar 1 tsp cinnamon 1/4 tsp nutmeg 1/4 tsp ground ginger 1/8 tsp cloves 1/2 to 1 box yellow cake mix (More cake mix makes the texture more like cake. 1/2 box makes the texture more like pie.) 1 c chopped pecans 1 c butter, melted Instructions Preheat oven to 350 degrees. Spray a 9x13 baking dish with non-stick spray. In a large bowl, beat together pumpkin, milk, eggs, sugar, and spices until well combined. Pour into prepared baking dish. Sprinkle the top with yellow cake mix. Sprinkle with chopped pecans. Pour melted butter evenly over top of cake. Bake for 60-70 min or until top is lightly browned and custard is set. Serve warm or cold. Store in the refrigerator. |
