SWEET AND SOUR BEEF AND CABBAGE SOUP Ingredients 1 1/2 lb beef stew meat 3 c water 1/2 tsp salt 6 c cabbage, shredded 3 stalks celery, cut into 1/2" pieces 6 oz can tomato paste 1/4 c brown sugar, firmly packed 2 TBSP lemon juice 3/4 tsp lemon-pepper seasoning 1 1/4 tsp salt Instructions Put stew meat in Dutch oven and add 3 c water and 1/2 tsp salt. Bring to boil. Then reduce heat and simmer on very low heat for 2 hr, until tender. Remove meat from broth and shred. Return meat to broth and add remaining ingredients. Bring to boil. Reduce heat , remove cover, and simmer 30 min. 8 to 10 servings |

Black-eye peans and collard greens soup with smoked sausage 1/2 pound 97 percent fat free kielbasa or smoked sausage 1 tsp extra virgin olive oil 1 medium yellow onion, chopped 1 1`/2 cups peeled, diced potato 15 ounce can black-eyed peas, rinsed 5 ounces frozen collard or turnip greens or spinach 14 ounce can reduced sodium chicken broth 1 1/4 cups water salt to taste ground black pepper to taste Cut the sausage in half lengthwise, then crosswise into 1/4 inch slices. In a large pot over medium, heat the oil. Add the sausage and cook, stirring often, until lightly browned, about 2 to 3 minutes. Add the onion and saute until softened, 3 to 4 minutes. Add the potatoes, black eyed peas, greens or spinach, broth and water.
