HAM AND SWISS BAKED EGGS
Ingredients

1 TBSP olive oil
1 1/2 c onion, finely chopped
1/4 tsp salt
1/4 tsp pepper
5 eggs
1 c ham, chopped
3/4 c Swiss cheese, grated
1/3 c cream
1/4 c dry bread crumbs
3 TBSP fresh chives, chopped (or 1 TBSP dried chives)
1/2 tsp fresh rosemary, chopped (or 1/8 tsp dried rosemary, crumbled)
1/2 tsp dried sage, crumbled

Instructions
Season onions with salt and pepper and saute over medium heat until tender.
Whisk eggs and add onions, ham, cheese, cream, bread crumbs, 2 TBSP chives, rosemary, and sage.
Pour into 8" x 8" buttered baking dish. Sprinkle top with remaining chives, Bake at 325 degrees until set in center, about 35 to 45 min.
Serve warm. Cut into six rectangles for breakfast or brunch or cut into 25 squares for appetizer servings..
