2 can sliced beets (16 oz each)
1/3 c sugar
4 tsp cornstarch
1/3 c white vinegar
2 TBSP catsup
1/2 tsp vanilla extract
4 whole cloves

Drain beets, reserving 1 c liquid, and set aside. Combine beet liquid and remaining ingredients in large saucepan and whisk until cornstarch dissolves. Bring to boil over medium heat and cook 1 min. Remove cloves and stir in beets. Serve warm or chilled.

Easy Pickled Beets

1 1/2 tsp mixed pickling spice
1 c apple cider vinegar
1 c sugar
1/2 tsp ground cinnamon
1/2 tsp salt
2 cans (16 oz each) sliced beets

Place pickling spices in spice ball or tie up in piece of clean cloth.
In large nonreactive pan, bring to boil vinegar, sugar, cinnamon, salt, and spice bag.
Drain beets, reserving 1/2 cup juice, and stir beets and juice into vinegar mixture.
Place in glass container, and cover and refrigerate overnight.
Remove spice bag before serving.
