Firecracker Shrimp
Ingredients

12 large shrimp, in shell
1 tsp salt
1/2 tsp garlic salt (divided use)
4 sheets spring roll wrappers
24 carrot strips (3" x 1/4")
1 egg. beaten
vegetable oil for deep frying
for sauce
1/4 c mayonnaise
2 TBSP hot pepper sauce

Instructions
Shell and devein shrimp, but leave tails intact. Dissolve salt in a bowl of warm water. Soak shrimp in salt water for 5 min. Then rinse with cold water and pat dry. Sprinkle with 1/4 teaspoon garlic salt.
Place the carrot strips in a small bowl, sprinkle with the remaining 1/4 tsp garlic salt, and set aside.
Cut each spring roll wrapper into thirds, making 3 long narrow strips.
Place shrimp on strip of spring roll wrapper and brush with egg. Place a carrot strip on each side of the shrimp and roll wrapper up tightly. The tail of the shrimp should be protruding from one end and the carrots from the other-to resemble a firecracker! Continue the process until all are rolled with the shrimp and carrots.
To make dipping sauce, mix mayonnaise and hot sauce. Set aside.
Deep fry shrimp rolls at 350 degrees until golden brown, about 2 min, turning 2 to 3 times. Drain on paper towels. Serve with dipping sauce.
