Sun-dried Tomato Pesto Ingredients 1/2 c basil leaves, packed 1/4 c pine nuts or almonds 4 garlic cloves 1 tsp lemon zest 1/4 tsp salt 1 c sun-dried tomatoes in oil, drained and packed 1/4 c Parmesan cheese, grated 1 c olive oil Instructions In food processor, process basil, pine nuts, garlic, lemon zest, and salt until coarsely chopped. Add sun-dried tomatoes and Parmesan and process until tomatoes are coarsely chopped. Add olive oil slowly and process until pesto is well mixed. Serve with toasted baguette slices or toss with hot pasta. |
