Roasted Red Pepper Pesto
Ingredients

8 oz roasted red bell peppers
5 TBSP extra virgin olive oil
1/2 tsp balsamic vinegar
1/2 c fresh basil (or parsley, if you prefer)
5 TBSP Parmesan cheese, shredded
3 cloves garlic, quartered lengthwise
2/3 c roasted pine nuts (or almonds or walnuts)
1/8 tsp pepper
1/8 tsp salt, or to taste

Instructions
In blender or food processor, puree peppers. Add cheese, nuts, and basil and blend thoroughly. Chop basil into tiny pieces and combine with peppers, cheese and nuts. Add oil, vinegar, and garlic and blend. Add salt and pepper to taste.
Willl keep in refrigerator several days or can be frozen.

patricia - this is a very nice recipe. i usually roast my red bell peppers in the broiler but i have used the store bought kind. i will give this recipe a try also.
