Queso with Two Cheeses
Ingredients

1/4 c onion, finely chopped
1 TBSP vegetable oil
2 garlic cloves, finely minced (or 1 tsp garlic powder)
1 1/2 c half-and-half
1 TBSP butter
1 TBSP flour
1/4 c pickled jalapenos, chopped
2 TBSP jalapeno juice
1 tsp cumin (or chili powder.)
pinch cayenne
1 c Monterey jack cheese, shredded
1/2 c sharp cheddar, shredded
salt and pepper

Instructions
Saute onion in 1 TBSP oil over medium-low heat about 1 min or until translucent.
Add garlic and saute 1 min until garlic has softened.
Add half-and-half and turn heat up a little.
Stir frequently until nearly boiling and remove from heat.
In a medium-sized sauce pan over low heat, melt 1 TBSP butter.
Add 1 TBSP flour and stir frequently for about 30 sec, but do not allow flour to brown.
Slowly add add hot milk to flour mixture, whisking to prevent clumping.
Add jalapenos and juice, cumin, and cayenne.
Stir frequently until the milk is nearly boiling.
Remove from heat and add cheeses, stirring until melted.
Add salt and pepper to taste.
Serve warm with tortilla chips.
