| Cheese Chili Corn Squares Ingredients 1 1/2 c corn kernels, fresh or frozen 1 lb Monterey Jack cheese, grated 6 large eggs, lightly beaten 3 jalapeno peppers, seeded and finely chopped 2 TBSP ground chili peppers, medium hot (or whatever amount of heat you prefer) salt and black pepper to taste Instructions Mix all ingredients together well. Spoon into buttered 9" X 9" baking pan. Bake at 350 degrees about 30 min or until top is nicely browned. Cool, and then cut into 1" squares. |
