|Terryâ€™s Spinach Casserole

1 red onion, thinly sliced
4 ounces baby bella mushrooms, sliced
1 tablespoon extra irgin olive oil
Â¼ teaspoon salt
Â¼ teaspoon pepper
2 (10 oz.) packages frozen spinach, thawed
1 16 0z.) container fat free cottage cheese
Â¼ cup grated pecorino cheese
Â¼ cup grated medium or sharp cheddar cheese
1 (4 oz.) jar diced pimentos, drained
3 eggs, slightly beaten
3 tablespoons flour
Heat oven to 375 degrees
In a large skillet, sautÃ© onion and mushrooms in the oil over medium heat until softened, about 5 minutes. Add the salt and pepper
Squeeze the spinach to remove as much water as possible. In a large bowl, stir together the spinach, the cooked onions and mushrooms, the cottage cheese, grated cheeses, and the pimentos. Mix in the eggs and flour.
Pour the mixture into a lightly greased 2 Â½ quart casserole and bake for 45 minutes.
This was a great recipe which I made last night. It takes a little work with all the ingredients but it is well worth it.
