Terry’s Spinach Casserole This recipe was submitted by Lee M. Woodruft who is a writer for the FamilyFun magazine Ingredients 1 red onion, thinly sliced 4 ounces baby bella mushrooms, sliced 1 tablespoon extra irgin olive oil ¼ teaspoon salt ¼ teaspoon pepper 2 (10 oz.) packages frozen spinach, thawed 1 16 0z.) container fat free cottage cheese ¼ cup grated pecorino cheese ¼ cup grated medium or sharp cheddar cheese 1 (4 oz.) jar diced pimentos, drained 3 eggs, slightly beaten 3 tablespoons flour Heat oven to 375 degrees In a large skillet, sauté onion and mushrooms in the oil over medium heat until softened, about 5 minutes. Add the salt and pepper Squeeze the spinach to remove as much water as possible. In a large bowl, stir together the spinach, the cooked onions and mushrooms, the cottage cheese, grated cheeses, and the pimentos. Mix in the eggs and flour. Pour the mixture into a lightly greased 2 ½ quart casserole and bake for 45 minutes. This was a great recipe which I made last night. It takes a little work with all the ingredients but it is well worth it. Beautiful Souls like Frank leave lasting memories in the hearts of those he touched . |
