Drop everything and fire up the oven because this is the best cookie you will ever make. It's called Koulourakes and it is a Greek cookie recipe Deb got from my sister in law's Greek friend. Preheat oven to 350 degrees 1 lb. softened butter 4 eggs 1 1/8 cup of sugar 2 tsp. baking powder 1 tbls. liquor (Deb used lemon and rum extract instead of liquor) (so the children can eat them.) 5-6 cups of flour Mix all ingredients and rest in refrigerator for 1 hour. Shape and bake on parchment paper for 20 minutes Put on rack when they come out of the oven and then with prepared frosting quickly frost cookies. recipe for frosting follows. 2 cups of confectionary sugar just enough milk to make it a thick spreading paste. If it's not thick enough add more confectionary sugar. If you use the extract add 1/4 tsp of whatever extract you use into the frosting. Editing because I forgot to add a picture ![]() Beautiful Souls like Frank leave lasting memories in the hearts of those he touched . |
