JALAPENO CORNBREAD Ingredients 1 c buttermilk 1 c cornmeal 1 c flour 3 TBSP sugar 1 tsp baking powder 1/2 tsp soda 2 eggs 4 TBSP melted shortening 1 c cream-style corn 1 c grated cheddar cheese 3 diced jalapeno peppers or 1 can diced green chili peppers 4 oz jar chopped pimientos 1 small onion, diced (optional) Instructions Combine buttermilk and cornmeal and let stand 30 minutes. TWIN MOUNTAIN MUFFINS Ingredients 2 c flour 1/4 c sugar 1/2 stick of butter or margarine, melted 1 egg, well-beaten 1 c milk 1/2 tsp salt 5 tsp baking powder Instructions Preheat oven to 400 degrees. LADY BIRD'S POPOVERS Ingredients 1 c flour, sifted 1 c milk 2 eggs, beaten 1/4 tsp salt 2 TBSP shortening, melted Instructions Preheat oven to 450 degrees and grease and heat muffin pans. Mix and sift flour and salt. Combine milk, eggs, and shortening. Gradually add to dry ingredients, beating about 1 min or until batter is smooth. Fill sizzling hot muffin pans 3/4 full. CHEESE BISCUITS Ingredients 2 c self-rising flour (or mixture pf 2 c minus 4 tsp all-purpose flour plus 3 tsp baking powder and 1 tsp salt) 6 TBSP shortening 1 c sharp cheddar cheese, shredded 3/4 c buttermilk 1 tsp dry mustard 1/4 tsp baking soda Instructions Cut shortening into flour until it resembles coarse meal. Stir in cheese. Combine buttermilk, mustard, and soda and add to flour, mixing well. Turn onto lightly floured surface and knead 3 or 4 times. Roll 1" thick and cut into 2" rounds. Place on lightly greased baking sheet. Bake at 450 degrees for 10 to 15 min or until lightly browned. 12 biscuits |

CHEESE MUFFINS Ingredients 1 3/4 c flour 1 TBSP baking powder 1/2 tsp salt 2 TBSP sugar 3/4 c sharp cheddar cheese, grated 1 egg 1 c milk 1/4 c margarine, melted Instructions Combine first four ingredients. Add cheese and mix well. Make well in center and add remaining ingredients. Stir just until moistened. Fill greased muffin cups 2/3 full. WHOLE WHEAT MUFFINS Ingredients 2 c whole wheat flour 2 tsp baking powder 1/2 tsp salt 1 egg 3/4 c milk 1/4 c oil 1/4 c honey Instructions Combine first 3 ingredients and make well in center. Add remainder of ingredients, stirring just until moistened. Bake at 400 degrees in greased muffin pan for 20 to 25 min. 12 muffins |

I've recently learned that pancake mix can make really good biscuits/muffins. I just mixed a couple banty eggs with about 1/3 - 1/2 cup buttermilk then added the pancake mix and stir well. Pour into a greased pan and bake at 400*until toothpick comes out clean or biscuit/muffin is firm to the touch and maybe golden on top. . You can make the mix sweet with stevia or sugar and add fruit or add garlic & cheese. I've done both successfully. |

MEXICAN HUSH PUPPIES Ingredients 3/4 c cornmeal 1/2 c flour 1 1/2 tsp baking powder 1/2 tsp salt 1 c Monterey Jack, Co-Jack, or Cheddar cheese, grated 4 oz can chopped green chiles, your choice of mild or hot 1 TBSP onion, minced 1 egg 1/2 c milk vegetable oil for frying Instructions Mix cornmeal, flour, baking powder, salt, cheese, chiles, and onion. Mix egg and milk and add to cornmeal mixture. Stir just until moistened. Heat vegetable oil in a deep fryer to 375 degrees (or use a heavy skillet with 3" of oil). Drop batter by tablespoonfuls into hot oil and cook for 3 to 4 min or until browned. Drain on paper towels and serve at once. 24 hush puppies |

CHEDDAR AND BACON MUFFINS Ingredients 2 c baking mix (Pioneer, Bisquick) 2/3 c milk 1/4 c vegetable oil 1 egg 1 c Cheddar cheese, shredded 2/3 c crisp bacon, crumbled, or 2/3 c real bacon bits Instructions Line 12 medium muffin cups with paper baking cups. Mix baking mix, milk, oil, and egg just until moistened. Stir in cheese and bacon. Spoon batter into muffin cups. Bake in 400 degree oven about 20 min or until browned. 12 muffins |

DOUBLE CORN AND GREEN CHILE MUFFINS Ingredients 1 1/2 c yellow cornmeal 1/2 c flour 1 TBSP baking powder 1 tsp salt 1/4 tsp black pepper 2 large eggs 1 c sour cream 1/4 c butter or margarine, melted 12 oz can whole kernel corn, drained, (or 1 1/2 c frozen, thawed) 1 c sharp Cheddar cheese, grated 1/4 c chopped canned green chiles, your choice of hot or mild Instructions Line muffin cups with foil baking cups. Mix well cornmeal, flour, baking powder, salt, and pepper in a large bowl. In a separate bowl, whisk eggs and sour cream until smooth. Add butter, corn, cheese, and chiles. Pour over dry ingredients and fold in until just moistened. Spoon into baking cups. Bake at 350 degrees for 25 to 30 min or until no longer moist in the middle. Let cool a few min before serving. SKILLET-FRIED CORN FRITTERS Ingredients 17 oz can whole kernel corn, undrained 1/3 c evaporated milk 2 eggs, beaten 1 1/2 c flour 2 tsp baking powder 3/4 tsp salt vegetable oil for frying Instructions Drain corn, reserving liquid, and set corn aside. Add enough liquid from corn to milk to equal 1/2 c. Mix milk with eggs. Combine flour, baking powder, and salt and gradually add milk and egg mixture. Stir until smooth and stir in corn. Heat 1/4" vegetable oil in large skillet to 350 degrees. Drop batter into skillet by the heaping teaspoonful. Fry just a few at a time. Turn once, and fry 3 to 5 min or until golden brown. Drain on paper towels and serve immediately. |

Honey Hush Corn Bread or Cheddar-Jalapeno Honey Hush Corn Bread Ingredients 1 1/4 c yellow cornmeal 1/4 c sugar 3/4 c flour 1 1/2 tsp baking powder 1/2 tsp baking soda 1 tsp salt 1 c buttermilk 2 eggs, slightly beaten 1/2 tsp vanilla 1/4 c melted butter 2 TBSP honey Instructions Preheat oven to 350 degrees. Grease an 8" x 8" baking pan. Heat pan in oven while you are mixing bread. Mix cornmeal, sugar, flour, baking powder, baking soda, and salt in a bowl. Whisk together buttermilk, eggs, vanilla, and melted butter in another bowl. Pour the wet ingredients into the dry and stir just until moistened. Take hot greased pan from the oven and pour in the batter. Bake for 25 to 30 min or until toothpick inserted in the middle comes out clean. Take the corn bread out of the oven and brush the top with honey. Cool for 10 min in the pan before cutting into squares. 9 servings Cheddar-Jalapeno Honey Hush Corn Bread Add 1 c extra-sharp Cheddar cheese, cut into very small cubes, and 2 medium jalapeno peppers, seeded and minced, to batter right before pouring it into the pan. Green Chile and Cheese Cornbread Ingredients 4 eggs 14 1/2 oz can creamed corn 2 c sour cream 1/4 c vegetable oil 1 c cornmeal 1 c flour 1 TBSP baking powder 1 tsp salt 1/2 tsp chile powder 6 green onions,white and light green parts only, chopped 3 c sharp Cheddar cheese, grated 7 oz can diced roasted green chiles Instructions Beat eggs in a large bowl. Stir in corn, sour cream, and oil. Add cornmeal, flour, baking powder, salt, and chile powder. Mix until ingredients are moistened. Stir in green onions, cheese, and chiles. Biscuits from Scratch Ingredients 1 1/2 c flour 1 TBSP baking powder 1 TBSP sugar 1/4 tsp salt 4 TBSP butter 4 TBSP shortening 1/2 c milk Instructions Sift flour, baking powder, sugar, and salt into a large bowl. Cut butter and shortening into small pieces and add to flour mixture. Use a pastry blender to mix until mixture resembles coarse cornmeal. Stir in milk. Knead dough gently 5 or 6 times on a lightly floured surface. Roll dough to 1/2" thickness. Cut out biscuits with a 2" biscuit cutter or glass and place on ungreased baking sheet. Traditional Hush Puppies Ingredients 3/4 c corn meal 1/3 c flour 1/2 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt 1/2 c buttermilk 1 egg 2 tsp bacon drippings, melted 1/3 c onion, minced vegetable oil for frying Instructions Mix all ingredients well. Heat oil in deep fryer or skillet to 375 degrees. Drop batter by heaping tablespoonfuls into hot oil and deep fry until crisp and golden brown, 2 to 3 min. Drain on paper towels and serve hot. |

Pull-Apart Bacon Bread Ingredients 1 lb bacon, fried and crumbled, or 3/4 c real bacon bits 1 TBSP vegetable or olive oil 3/4 c chopped red and green peppers 3/4 c onion, chopped 1 tsp dried dillweed, crumbled or 1 tsp dried oregano, crumbled 3 tubes (7 1/2 oz each) refrigerated buttermilk biscuits 1/2 c butter or margarine, melted 1/2 c cheddar cheese, shredded (or cheese of your choice) Instructions Saute peppers and onion in oil over low heat until tender. Cut biscuits into quarters and place in large mixing bowl. Add pepper mixture, bacon, butter, and cheese, tossing until well combined. Corn Bread Ingredients 1 egg 1 c plus 2 TBSP milk 3 TBSP vegetable oil 1/4 c flour 1 1/4 c corn meal 2 TBSP sugar 3 tsp baking powder 1 tsp salt Instructions Generously grease a 9" square baking pan or #8 cast iron skillet or corn stick or muffin pan. Heat pan in 450 degree oven while mixing corn bread. Beat egg with milk and oil. In another bowl mix flour, corn meal, sugar, baking powder, and salt. Stir dry ingredients into egg mixture until just smooth. Pour batter into hot pan. Bake at 450 degrees until nicely browned, about 20 to 25 min or 10 to 15 min for corn sticks or muffins. Nieman Marcus Popovers Ingredients 3 1/2 c milk 4 c flour 1 1/2 tsp salt 1 tsp baking powder 6 large eggs, at room temperature Instructions Preheat oven to 450 degrees. Microwave milk on high about 1 1/2 min or until warm to the touch. Sift flour, salt, and baking powder together in another bowl. Beat eggs with electric mixer fitted with a whisk about 3 min, until foamy and pale in color. Turn mixer to low and add warm milk. Gradually add flour mixture and beat on medium for 2 min. Let batter rest 1 hr at room temperature. (Don't skip!) Spray a popover or muffin pan well with nonstick spray. Fill cups almost to top and place popover tin on a cookie sheet. Bake at 450 degrees for 15 min. Turn oven down to 375 degrees and bake 30 to 35 min longer, until popovers are deep golden brown on the outside and airy on the inside.
