Don't exactly know if you would call a pizza a casserole, but this one I make for John's alkaline diet is a Full meal in of itself......not your normal Pizza, but very yummy in the tummy.

1 lb. Walmart Turkey Italian Sausage, cooked
One 12 inch Mary Mia Pizza Crust
1 Ten ounce Frozen Stir Fry Vegetable Mix-steamed
1/2 Lg. Jar of Great Value Mushroom and Green Pepper spaghetti sauce
1 1/2 Cup Grated Low Fat Colby and Monterrey Jack Cheese

Lightly spray edges of Pizza Crust with Pan. Spoon over Sauce, generously covering crust. Evenly spread veggies over sauce. Add meat over veggies , and top generously with cheese.
Baked in a preheated 375 F oven for 30-35 minutes.

Live, love and laught as if today was your last.

1 medium bag tortilla chips, lightly crushed
2 TBSP margarine
1 c onion, chopped
1/4 c salsa, mild to hot as you prefer
1 can cream of chicken soup
1 can cream of mushroom soup
1 can evaporated milk
2 c cooked chicken, diced
2 c grated cheddar cheese

Put half the chips in greased 13" x 9" pan. Saute onion until tender and add both soups, milk, and salsa. Stir over low heat until blended. Spoon half the soup mixture over chips; then layer with 1 c chicken and 1 c cheese. Repeat layers. Bake uncovered at 350 degrees until hot and bubbly, 20 to 25 minutes.

2 c cooked chicken (or turkey), chopped
1 c Cheddar cheese or your choice of cheese, shredded
1 can refrigerated crescent rolls
1 can cream of chicken soup
1 c milk

Combine chicken and 1/2 c cheese. Separate rolls and roll up with about 4 TBSP chicken mixture in each. Heat soup, milk, and 1/4 c cheese and stir to mix. Put 1/2 of the soup mixture in a baking dish. Arrange rolls on top and bake uncovered at 375 degrees for 20 minutes. Sprinkle with remaining cheese and leave in oven long enough to melt. Serve with remaining soup mixture as sauce.
4 servings.

Chicken and stuffing
(sometimes I use pork instead)

1 lb chicken (white and or dark meat)
1 box of Stove Top stuffing for TURKEY
1/2 med fresh green bell pepper chopped
1/2 med vidalia onion chopped
8 oz. fresh mushrooms sliced
salt and pepper to taste
8oz swiss cheese (or any cheese you like)

Precook and debone chicken (or pork) chop into bite size pieces
Saute veggies,add meat, add salt & pepper to the water for the stuffing
add stuffing, mix well, cook as directed, Pour into a 9 x13 baking dish, cover,
bake 350 for 30 minutes, uncover, add swiss cheese until melted or slightly browned.

I make a gravy from the chicken or pork drippings to pour over the casserole and add a side dish of veggies.

for crust

1/2 c butter or margarine, softened
1 c sour cream
1 egg
1 c flour
1 tsp baking powder
1 tsp salt
1/2 to 1 tsp thyme or sage
1/2 to 1 c Cheddar or American cheese, shredded
for filling
1/2 c carrots, finely chopped
1/2 c onion, chopped or 2 TBSP instant minced onion
1/2 c green pepper or celery, chopped
1/2 c red pepper, chopped or 1/4 c pimiento, drained and chopped
2 cloves garlic, minced or 1/2 tsp garlic powder
2 TBSP butter or margarine
2 c cooked chicken or turkey, cubed or 2 cans (9.75 oz each) chicken
1 can cream of chicken soup, undiluted
4 oz can of mushroom pieces, drained
salt and pepper, to taste

for crust

In small mixer bowl, combine butter, sour cream, and egg. Beat on medium until smooth. Add flour, salt, baking powder, and thyme. Mix on low speed until thoroughly combined. Spread evenly in 9" pie plate or 12" x 8" baking dish. Press up the sides, ending 1/2' below the top.
for filling
In large frying pan, saute carrots, onion, peppers, and garlic in butter until tender. Remove from heat and mix in chicken, undiluted soup, drained mushrooms, salt, and pepper. Spoon into crust and sprinkle cheese on top. Bake at 400 degrees for 25 to 30 min or crust is golden brown. Let stand 10 min before serving.

6 boneless, skinless chicken breast halves
1/8 tsp garlic powder
1/8 tsp black pepper
6 slices Swiss cheese
1 can cream of chicken soup
1/4 c milk
2 c herb stuffing mix
1/4 c butter, melted

Coat a 13" x 9" pan with nonstick spray. Place chicken breasts in pan. Sprinkle with garlic powder and pepper. Top each piece of chicken with a slice of Swiss cheese.
In small bowl, combine soup and milk; pour over chicken. Sprinkle with stuffing mix; drizzle with melted butter. Bake at 350 degrees for 50 min or until chicken is done (internal temperature of at least 165 degrees).

2 TBSP vegetable oil
2 garlic cloves, minced or 1/2 tsp garlic powder
1 tsp fresh ginger,minced, or 1/2 tsp ground ginger
3 chicken breast halves, boneless and skinless, cubed
1 1/2 c chicken broth or bouillon
2 TBSP cornstarch
1 c (8 oz) mushrooms, sliced
1 1/2 c (4 oz) snow peas, trimmed
8 oz can sliced water chestnuts, drained
8 oz can bamboo shoots, drained
1/4 c carrots, thinly sliced
4 green onions, chopped
1/2 c broccoli florets
soy sauce
hot cooked rice

Heat oil in wok or large skillet. Add garlic and ginger and stir fry 30 sec. Add chicken and stir fry for 4 minutes.
Combine chicken broth and cornstarch in a bowl . Pour the mixture into the wok over the chicken. Add all vegetables. Cover and simmer for about 10 min or until vegetables are crisp tender. Serve with white rice and soy sauce.
4 servings

*NOTE: To make this dish faster, you can substitute a frozen oriental stir-fry vegetable mixture, like Bird's Eye for the vegetables.

3 c chicken breast cut into 1” chunks
2 TBSP garlic, minced
1 TBSP ginger, minced
about 3 TBSP vegetable oil for cooking
1/2 c green onions, chopped
1 red bell pepper, chopped
1/3 c dry roasted peanuts
hot cooked rice
for sauce
3 TBSP soy sauce
2 TBSP peanut butter
2 tsp white wine vinegar
1 tsp sesame oil
1 tsp brown sugar
1/4 tsp cayenne pepper
1/4 c water

In a wok or large skillet, cook garlic, ginger, and chicken in 2 TBSP of oil for about 5 min until chicken is done. Remove from pan and set aside.
Add 1 TBSP oil to wok and stir fry red bell peppers and green onions about 2 min or until crisp tender. Remove from pan and set aside.
Add sauce ingredients to pan, mix well, and stir over medium heat until mixture comes to a boil.
Mix chicken, onions, pepper, peanuts, and sauce together in large serving dish and stir. Serve with white rice.

2 refrigerated pie crusts
3 TBSP butter or margarine
1 c onion, chopped
1 c celery, chopped
1 c carrot, thinly sliced
1 c potato, diced
1 c mushrooms, sliced (8 oz)
3 garlic cloves, minced (or 1/2 to 3/4 tsp garlic powder)
2 tsp parsley, chopped (or 1 tsp dried parsley)
1/2 tsp thyme
1/2 tsp poultry seasoning
salt and pepper to taste
3 TBSP flour
2 c chicken broth or bouillon
2 c cooked chicken or turkey, diced

Place bottom crust in a 9” pie plate.
In a large skillet, melt butter. Add celery, onion, carrot, potato, mushrooms, and garlic. Stir fry for 5 min. Stir in parsley, thyme, poultry seasoning, salt, and pepper. Stir in flour. Add chicken broth and simmer until mixture has thickened, about 5 or 6 min.
Add chicken and pour mixture into bottom crust. Place the other crust on top and crimp edges. Cut a few little slits in the top crust.
Bake at 425 degrees for 15 min. Then decrease heat to 350 degrees and bake an additional 45 min.

1 teaspoon baking soda
1 large egg, beaten
vegetable oil for frying
for sauce
1 c chicken broth or bouillon
1 TBSP oyster sauce
1 1/2 tsp sugar
1 TBSP soy sauce
1/2 teaspoon pepper
1/2 c green bell pepper, chopped
1/2 c onion, chopped (sliced)
1 c cashews
2 green onions, including tops, chopped
hot cooked rice

Combine flour, baking soda and 1/2 tsp of cornstarch. In another bowl beat the egg. Dip chicken first in flour, then in egg, and then in flour again. Fry in oil at 350 degrees in batches until golden brown. Drain on paper towels and keep hot.
In a wok or large skillet, stir fry green pepper and onion in 2 tsp oil for 2 to 3 min. Remove from wok and set aside.
In wok, mix chicken broth, oyster sauce, soy sauce, sugar, pepper, and 2 TBSP cornstarch.
Cook and stir over medium heat until thickened. Pour sauce over chicken pieces, add green peppers and onions, cashews, and green onions. Serve with hot cooked rice.

1 boneless skinless chicken breast, grilled (or 1 to 1 1/2 c cooked chicken, shredded)
1 tsp teaspoon honey
1/2 c hickory flavored barbecue sauce
1 pizza crust, store bought or homemade
1/2 c gouda cheese, shredded (or Monterey jack cheese)
1/2 c mozzarella cheese, shredded
1 small red onion, halved and thinly sliced

Cover chicken with wax paper and beat with flat side of mallet until chicken is 1/2 " thick. Grill until fully cooked. Then shred into small pieces and set aside.
Combine honey and barbecue sauce and set aside.
Place pizza crust in pizza pan or large oven proof skillet. Spread barbecue sauce over crust and sprinkle with both cheeses and top with chicken and onion.
Bake at 450 degrees for 12 to 14 min or until crust is nicely browned.

3 c chicken breast, cut into 1" pieces
1 TBSP cornstarch
2 tsp sesame oil
3 TBSP green onions, including tops, chopped
3 garlic cloves, minced
1/2 tsp crushed red pepper flakes
1/2 tsp powdered ginger
2 TBSP rice vinegar
2 TBSP soy sauce
2 tsp sugar
1/3 c dry roasted peanuts
hot cooked rice

Toss chicken with cornstarch to coat. Stir fry chicken in sesame oil in wok or large skillet over medium heat for 5 to 7 min or until no longer pink inside. Remove chicken from wok.
Stir fry in wok green onions, garlic, red pepper flakes and powdered ginger for 20 sec. Add vinegar, soy sauce, and sugar to wok and stir well.
Add chicken to wok and stir to coat with sauce. Add peanuts and heat well. Serve with hot cooked rice.

1 1/3 c chicken broth or bouillon
1 c canned chopped green chiles
1 c onion, chopped
1 c sour cream
1/2 tsp salt
1/2 tsp cumin (or chili powder)
1/2 tsp black pepper
2 cans cream of chicken soup, undiluted
1/4 tsp garlic powder
cooking spray
24 corn tortillas
4 c cooked chicken breast, chopped
2 c sharp cheddar cheese, shredded

Combine first 9 ingredients in large saucepan. Bring to a boil, stirring constantly. Remove from heat.
Spread 1 c soup mixture in a 13" x 9" baking dish coated with cooking spray. Arrange 6 tortillas over the soup mixture, and top with 1 c chicken and 1/2 cup cheese. Repeat layers, ending with the cheese. Spread remaining soup mixture over cheese. Bake at 350 degrees for 30 min or until bubbly.

Thanks, Maggi! It's great to see you here. Eyes' pizza is really good. When you have a free moment Rolling on the floor laughing , add some of your own favorite recipes. I'd like to know what you put in your Italian sausage meatloaf. I used Italian sausage along with the usual ground beef in lasagna recently when my son and DDIL were here. They noticed the difference and liked it.

Well sometimes I make a really meaty meatloaf for chilling and slicing thin. In it I use 3 different turkey products.

I use a
1 lb chub of ground turkey that's a finer grind but has a bit more fat in it, and a
2 lb tray pack of the coarser ground turkey, plus the
2 lb tray pack of the Italian sausage ground turkey

Because I want the meat to hold together when I am slicing it cold I don't use cut up onion or bell pepper in this one. I do use some seasoned bread crumbs, a dose of Italian herb blend, onion powder, garlic powder and whatever Mrs Dash seasoning I have in the cupboard. I pack the meat into a glass loaf pan and cover it tightly with foil and bake it at 350 for about 3 hours. I use a baking pan underneath the loaf pan to catch the juices, the elderly crippled dog gets those.

I sometimes make a 2 loaf recipe that uses ground beef, pork Italian sausage, turkey Italian sausage and plain ground turkey. I do add minced onion, garlic and bell pepper to it. Then after I form it into loaves I cover the tops of each loaf with 3 or 4 strips of pepper bacon. Cover with foil and bake for about 2 1/2 hours, take off the foil and continue baking till the bacon is a bit crispy. I don't much care for tomatoey sauce on top, but I have had it with the ketchup that has jalapeno (?) in it, that was pretty good.

Smoked Turkey, Cream Cheese, and Cranberry Sauce Sandwiches

1 baguette, cut in half lengthwise *See NOTE at end.
8 oz cream cheese, softened
15 oz can whole-berry cranberry sauce
8 oz smoked turkey, thinly sliced
1 red onion, sliced thin

Spread cream cheese on one side of baguette and cranberry sauce on the other. Spread turkey and onion evenly on one half of baguette half and top with other half. Cut baguette into 6 pieces, wrap in plastic wrap, and chill.

*You could use 6 to 8 sub rolls instead of baguette.

Chicken and Rice Casserole

2 c cooked chicken, diced
1 c celery, diced
1/2 c slivered almonds
2 TBSP onion, minced
2 c cooked rice
1 c cream of chicken soup, undiluted
1 tsp lemon juice
3/4 c mayonnaise
1/4 c water
1 c crushed potato chips

Mix together lemon juice, mayonnaise, and water. Stir in remaining ingredients except potato chips and spoon into baking dish. Top with crushed potato chips and bake at 350 degrees for 30 min.

Slow Cooker Chicken and Wild Rice

6 oz package long grain and wild rice mix
2 lb boneless skinless chicken breast halves
1 TBSP vegetable oil
1 tsp butter
2 1/2 c sliced fresh mushrooms or 7 oz can sliced mushrooms, drained
1 can condensed cream of chicken soup, undiluted
1 c water
3 bacon strips, cooked and crumbled, or 3 TBSP real bacon bits
1 tsp dried parsley flakes
1/2 tsp dried thyme
1/4 tsp dried basil

Place rice (without seasoning packet) in 5 to 6 qt slow cooker.
In a large skillet, brown chicken in oil and butter. Add to slow cooker.
In the same skillet, saute mushrooms until tender; pour over chicken.
In a small bowl, combine soup, water, bacon, herbs, and contents of seasoning packet. Pour over top. Make sure chicken is covered by sauce to keep it from drying out.
Cover and cook on low for 4 hrs or until internal temperature of chicken is at least 165 degrees.
6 servings.
