1 1/2 c yellow cornmeal
1/2 c flour
1 TBSP baking powder
1 tsp salt
1/4 tsp black pepper
2 large eggs
1 c sour cream
1/4 c butter or margarine, melted
12 oz can whole kernel corn, drained, (or 1 1/2 c frozen, thawed)
1 c sharp Cheddar cheese, grated
1/4 c chopped canned green chiles, your choice of hot or mild

Line muffin cups with foil baking cups. Mix well cornmeal, flour, baking powder, salt, and pepper in a large bowl. In a separate bowl, whisk eggs and sour cream until smooth. Add butter, corn, cheese, and chiles. Pour over dry ingredients and fold in until just moistened. Spoon into baking cups. Bake at 350 degrees for 25 to 30 min or until no longer moist in the middle. Let cool a few min before serving.
