CORN CASSEROLE

Ingredients

1/2 c butter or margarine
2 eggs
1 can whole kernel corn, drained
1 can cream style corn
8 oz. sour cream
8 1/2 oz packet Jiffy cornbread mix (or cornbread recipe that follows)
1 cup cheese, cheddar, monterey jack, etc., grated
1 green pepper, chopped, optional

Instructions
Melt butter. Beat eggs slightly. Stir together all ingredients except green pepper and cheese. Add the green pepper and grated cheese. Pour into an 11x7 inch glass baking dish.
Bake at 350 degrees for about an hour or until top is light golden brown. Serves 8.

Cornbread Mix (1 packet)
2/3 cup all purpose flour
1/2 cup yellow corn meal
3 TBSP sugar
1 TBSP baking powder
1/4 tsp salt
2 TBSP vegetable oil

(To make cornbread with this mix, combine with 1 egg and 1/3 c milk. Bake in greased pan at 400 degrees for 15-20 min or until browned.
