SKILLET-FRIED CORN FRITTERS
Ingredients

17 oz can whole kernel corn, undrained
1/3 c evaporated milk
2 eggs, beaten
1 1/2 c flour
2 tsp baking powder
3/4 tsp salt
vegetable oil for frying

Instructions
Drain corn, reserving liquid, and set corn aside. Add enough liquid from corn to milk to equal 1/2 c. Mix milk with eggs. Combine flour, baking powder, and salt and gradually add milk and egg mixture. Stir until smooth and stir in corn.
Heat 1/4" vegetable oil in large skillet to 350 degrees. Drop batter into skillet by the heaping teaspoonful. Fry just a few at a time. Turn once, and fry 3 to 5 min or until golden brown. Drain on paper towels and serve immediately.
