SHRIMP AND CORN BISQUE
Ingredients

1/4 c butter or margarine
2 onions, chopped
2 to 3 cloves garlic, minced
1 green bell pepper, diced
1 1/2 lb small shrimp, peeled and deveined
8 oz cream cheese
14.5 oz can tomatoes and green chiles
2 (14 oz each) cans cream-style corn
1 TBSP fresh basil, minced, or 1 tsp dried basil
3 c milk
1 tsp black pepper
1/2 tsp cayenne pepper (or more if you desire)
salt to taste
4 green onions, chopped

Instructions
Melt butter in saucepan over medium heat. Saute onions, bell pepper, and garlic about 5 min or until onion turns translucent. Add shrimp and saute another 5 min until shrimp turn pink. Add cream cheese and stir until melted. Add tomatoes, corn, basil, milk, black pepper, and cayenne pepper. Turn down heat and simmer about 10 min. Taste and add salt and adjust spices. Add green onions and serve.
