CHICKEN WITH PEANUT SAUCE Ingredients 3 c chicken breast cut into 1†chunks 2 TBSP garlic, minced 1 TBSP ginger, minced about 3 TBSP vegetable oil for cooking 1/2 c green onions, chopped 1 red bell pepper, chopped 1/3 c dry roasted peanuts hot cooked rice for sauce 3 TBSP soy sauce 2 TBSP peanut butter 2 tsp white wine vinegar 1 tsp sesame oil 1 tsp brown sugar 1/4 tsp cayenne pepper 1/4 c water Instructions In a wok or large skillet, cook garlic, ginger, and chicken in 2 TBSP of oil for about 5 min until chicken is done. Remove from pan and set aside. Add 1 TBSP oil to wok and stir fry red bell peppers and green onions about 2 min or until crisp tender. Remove from pan and set aside. Add sauce ingredients to pan, mix well, and stir over medium heat until mixture comes to a boil. Mix chicken, onions, pepper, peanuts, and sauce together in large serving dish and stir. Serve with white rice. |
