1 1/2 lbs. yellow squash
1/2 c chopped onions
1 stick melted butter
1/2 c mayonnaise
1/2 tsp salt
1/4 tsp pepper, if desired
1 TBSP sugar
2 eggs, beaten
1 c grated cheddar cheese
1/4 c bread or cracker crumbs

Slice squash and microwave until slightly tender. Drain and place in 2 quart casserole. Saute onions in 2 TBSP butter until clear. Mix onions, melted butter, mayonnaise, grated cheese, sugar, pepper and eggs and stir into squash. Sprinkle with bread crumbs and bake for 30 minutes at 350 degrees. Serves 6.
