|Mediterranean Orzo Salad
8 oz orzo pasta
4 c fresh baby spinach, chopped
1 c grape tomatoes, halved
1/2 c pitted kalamata olives, halved
1/2 c artichoke hearts, chopped
1/2 c fresh basil leaves, chopped
1/3 c red onion, finely diced
1/3 c toasted pine nuts
1/3 c feta cheese, crumbled
2 cloves garlic, minced
3 TBSP red wine vinegar
2 TBSP extra virgin olive oil
salt and pepper to taste
Cook orzo according to directions on package. Drain and set aside to cool.
In a large bowl, combine spinach, tomatoes, olives, basil, onion, pine nuts, and cheese.
In a small bowl whisk garlic, vinegar, oil, salt and pepper. Pour over salad and stir to combine.
