Slow Cooker Breakfast Casserole Ingredients 12 slices bacon, cooked and crumbled or 3/4 c real bacon bits 4 c dry bread, cubed 2 c cheese of your choice, shredded 2 1/2 c mushrooms, sliced 8 eggs 1 1/2 c milk 1/2 tsp salt 1/2 tsp pepper Instructions Cook bacon until crisp, crumble, and set aside. In a large bowl, mix cheese, mushrooms, eggs, milk, salt, and pepper. Put bread cubes in bottom of 6 qt slow cooker that has been sprayed with cooking spray. Pour egg mixture on top of bread and top with bacon. Cover and cook on low for 6 to 8 hrs or on high for 3 to 4 hrs. When eggs have completely set, and casserole has begun to pull away from the sides, take lid off cooker and let moisture evaporate for 15 min before serving. 8 to 10 servings |
