Southwestern Chicken Wontons
Ingredients

2 TBSP vegetable oil
1/2 c onion, minced
1/2 c red bell pepper, minced (or use part hot peppers)
2 cloves garlic, minced or 1 tsp garlic powder
1 1/2 c leftover cooked chicken, finely chopped or 12 oz can chicken, drained
1 1/2 c Monterey jack cheese, shredded (for extra heat you can use pepper jack cheese)
1/4 c cilantro leaves, finely chopped
1/2 c salsa of your choice
1/4 c ranch dressing
salt and pepper to taste
1 package wonton wrappers
1 egg white whisked with 2 TBSP water

Instructions
Saute onions and pepper in oil for 5 min. Add garlic and saute 1 min longer.
In large bowl mix well onion mixture, chicken, cheese, cilantro, salsa, ranch dressing, salt, and pepper.
Spoon 1 TBSP chicken mixture onto each wrapper. Moisten bottom edge with egg white; then fold into triangle and seal edges.
Deep fry at 350 degrees until nicely browned.
