Corn Bread

1 egg
1 c plus 2 TBSP milk
3 TBSP vegetable oil
1/4 c flour
1 1/4 c corn meal
2 TBSP sugar
3 tsp baking powder
1 tsp salt

Generously grease a 9" square baking pan or #8 cast iron skillet or corn stick or muffin pan.
Heat pan in 450 degree oven while mixing corn bread.
Beat egg with milk and oil.
In another bowl mix flour, corn meal, sugar, baking powder, and salt.
Stir dry ingredients into egg mixture until just smooth.
Pour batter into hot pan.
Bake at 450 degrees until nicely browned, about 20 to 25 min or 10 to 15 min for corn sticks or muffins.
