3 1/2 c milk
4 c flour
1 1/2 tsp salt
1 tsp baking powder
6 large eggs, at room temperature

Preheat oven to 450 degrees.
Microwave milk on high about 1 1/2 min or until warm to the touch.
Sift flour, salt, and baking powder together in another bowl.
Beat eggs with electric mixer fitted with a whisk about 3 min, until foamy and pale in color.
Turn mixer to low and add warm milk.
Gradually add flour mixture and beat on medium for 2 min.
Let batter rest 1 hr at room temperature. (Don't skip!)
Spray a popover or muffin pan well with nonstick spray.
Fill cups almost to top and place popover tin on a cookie sheet.
Bake at 450 degrees for 15 min.
Turn oven down to 375 degrees and bake 30 to 35 min longer, until popovers are deep golden brown on the outside and airy on the inside. Turn out popovers and serve hot.
