Pasta e Fagioli #2 Ingredients 1 lb ground beef 1 c onion, diced 1 to 2 TBSP garlic, minced 2 ribs celery, sliced 3 c chicken broth (more if soup is too thick) 1 c carrots, julienned 1 jar mushroom and green pepper pasta sauce 1 can Rotel tomatoes 1 can cannellini or great northern beans, drained 1 can kidney beans, drained 1 c ditalini or other small tube pasta, cooked and drained Instructions In a large pot, brown ground beef with onion; add garlic in the last few minutes. Drain well. Add remaining ingredients except pasta. Simmer until vegetables are tender. Add cooked pasta, and sprinkle each serving with grated Parmesan cheese. 4 to 6 servings |
