CREAM CHEESE-PECAN POUND CAKE Ingredients 1 1/2 c pecans, chopped, divided 1 1/2 c butter 8 oz cream cheese, at room temperature 3 c sugar 6 eggs, 3 c cake flour, sifted dash of salt 1 1/2 tsp vanilla extract Instructions Sprinkle 1/2 c chopped pecans in bottom of greased and floured tube pan. Set aside. Cream butter and cream cheese and gradually add sugar. Add eggs one at a time, beating well after each addition, and add vanilla extract. And flour and salt and blend well. Fold in remaining pecans. Pour into tube pan. Bake in 325 degree oven for 1 1/2 hrs or until pick inserted in middle of cake comes out clean. Cool in pan 10 minutes before inverting pan to remove cake. Source: Elaine Laughlin |
